Had the last of my meetings with Traci today (for this 12 weeks, anyway) and she threw down a challenge: to go the next seven days w/o refined carbs, i.e. cereal, bread, pasta, pitas or tortillas.
It’s not that they are bad, she explained, but more grains are better for optimal health. Grains like oatmeal, brown rice, quinoa, etc.
This actually shouldn’t be too terribly difficult, since I’ve pretty much not been eating cereal nor pasta. I will miss my pita pizzas this week, as well as my old standby peanut butter and honey sandwich.
The first big challenge will be lunch tomorrow. I’m going to a seminar, and even though they provide lunch, I’d planned on taking a sandwich and fruit. Not sure what to do now. I won’t have access to a microwave, and that makes things a little more difficult.
