This evening, I made a mini-salad with 3/4 c of butter lettuce, which I think is my favorite so far. I decided to get tackle another goal and have it without animals – no chicken, no shrimp, no salmon. I added raisins (like candy to me – love ’em), cherry tomatoes, mandarin oranges and black beans. I ate it, and I’m still here to talk about it. And on top of that, I enjoyed making it. It’s so colorful and fresh. While I was making tonight’s salad, I made a second one for tomorrow’s lunch.
