Stove-Top Sunday, Recipe Two: Butternut Tomato Soup*

This recipe gave me some trouble. Let me restate that. The recipe was fine, but I had some trouble.

  • Apparently, I forgot the celery. I remember seeing it on the shelf at Publix, but it didn’t make it home. So I left out the celery. Hopefully, it’s not the magic ingredient that brings it all together.
  • I needed a quart and a half of vegetable broth, but only had a quart. Added 16 oz. of water.
  • I don’t know how to use the slicing attachment for the food processor. I couldn’t figure out how to use the disc – it didn’t fit. So I hand chopped the shallot, which like an onion, made me cry.

All of that aside, the verdict on the soup? Initial taste was great, but it’s still too hot to eat.

  1. Good, but I think maybe best as a side. I'm a little sad that I keep trying recipes, but haven't really found any that I LOVE. I suppose it's trial and error, but it's a lot of work trial and error.
