I’m Really Cooking Now

Literally! Last night, I made some vegan split pea soup in the crockpot, and we had some for lunch today. It was really pretty good! And then I made some black bean dip this afternoon. I took part of it over to Mom and Dad’s this evening, and everyone except Mom loved it. (She didn’t like the lime taste she said it had!)

Tomorrow, I’m going to make a batch of taco soup for the week ahead, as well as whole wheat pasta with Roman beans.

To make cooking easier, I’m cleaning our out and reorganizing our pantry. I pulled out a lot of foods that we don’t eat anymore and took them over to Mom and Dad’s house tonight. Mom took some; Mary Elliott took the rest. I need to know what we have and where it is when I cook, and I also need to be able to walk into the pantry. I got over half done today and hope to finish the rest in the morning.

As an aside, I worked out early this a.m., but not as early as I’d like. I went to the gym at 7:30 a.m. – it opens at 7 a.m. on Saturdays – but it was closed. I ran a few errands and came back at 8 a.m., still closed. I came home and had breakfast, then called about 8:30 a.m. It was open then, so I drove on over. I did 30 minutes on the recumbent bike.
