Healthy in Twelve Update

Since last week, I’ve lost four lbs. A lot of that was likely water weight, aside from the fact that I’m eating A LOT better than I was the last week I was in Atlanta.work_in_progress_0

I’m coming up short on potassium and vitamin A.

My goals for the coming week are to:

  1. Increase my veggies to 2-3 servings per day. That will be easier once I’m back in my own kitchen.
  2. Work on getting more potassium and vitamin A.
  3. Exercise four times.

Here’s one of the first recipes I’m going to try? Skinnytaste Spinach Lasagna Rollups. Look good, have spinach (one of the few green veggies I can handle), easy to freeze and portable, i.e. good for when I return to work.
