Ideas from Traci from yesterday.
Since I like (!) kale, she suggests that I add some chopped up into my favorite soup. She says that I won’t even taste it, and it’s an easy way to get more greens into my diet. She also said that kale was the most nutritious leafy green. (Who knew?)
The next time I make my “green” meatloaf, she suggested that I make some meatballs to add to spaghetti and/or patties to take for lunch. Again, sneaky ways of adding those greens.
Got some great recipes, including this one for Shredded Brussels Sprouts with Pecans and Mustard Seeds. (Yep, I’m going to try it!) Also trying this one for Greek Quinoa Burgers. (Beth’s especially excited about this one, even after I told her it involved no meat!)
