Vegetable Bean and Barley Soup

One of my goals this week is to try a new soup. I found this recipe online, and it’s on the stove as I type. I made a few changes – I didn’t use the onions, so I didn’t saute them or the vegetables. I used frozen corn, baby lima beans, peas, string beans and carrots. I also added diced tomatoes. And on the beans, I used a can of mixed Northern and Pinto beans. I’ll be sure to let everyone know how it turns out.

  1. I'm a little sad – I didn't care for the soup. It was bland, and something just didn't work for me. I keep hoping to expand my palate more, that's why I'm disappointed that this didn't work for me. But tomorrow, I'm going to try the tomato soup. Maybe that will hit a home run. All of this being said, Sister LOVED the soup!
