Let me first start out by saying that there are actually FOUR recumbent bicycles downstairs, and I probably didn’t have to get out by 5 a.m. to get one. And the bald man wasn’t even there! I did get to the gym early, though, and the recumbent bike was easier on my hips and knee. I took a 45-minute spin and was soaking wet when I finished.
Today is Tuesday, and I had my regular meeting with Traci the Nutritionist this morning. I got good marks for planning and trying new foods last week
My goals for this week:
- Keep moving every day, safely due to the knee and hip issues.
- Only one serving of nuts or peanut butter per day, but not both on the same day.
- Make a bean dip or hummus.
- Increase the volume of veggies I’m eating. (Hopefully the dip and/or hummus will help with that one!)
We also went over a few recipes from my new copy of Deceptively Delicious by Jessica Seinfeld. Tonight I’m going to try Tofu Nuggets, because despite my aversion to vegetables, I do like tofu. (Go figure!)
