Those @#$%^& Tofu Nuggets nearly got the best of me today!
After work, I stopped by Kroger to get whole wheat bread crumbs, but they didn’t have any. So I went to Publix. Then Fresh Market. And Piggly Wiggly. Even Wal-Mart. FINALLY, I found them at Earth Fare. (Where I not only bought three bags of them, but also a very cool Laptop Lunch/Bento-Ware set for my work lunch packing!)
I finally get home from the Grocery Store 2010 Tour, and start making the Tofu Nuggets. I don’t know whether it was because I only used the egg white or my tofu cubes were too small, but the breadcrumb mixture didn’t stick to the broccoli puree-covered tofu cubes. GRRRRRR! But that tofu wasn’t going to get the best of me! I threw the tofu cubes, broccoli puree and breadcrumbs into the cooking spray-coated frying pan and sauteed them, then served them over brown rice, half a cup, of course. And it wasn’t bad.
Hope my next cooking adventure goes a little better…
