I’m trying to get back in the routine of cooking for the week on Sundays. It makes it SO much easier during the week! It’s just been so hot; I hate to turn the oven on when it’s so hot. Taking advantage of the “cooler” weather, here are the recipes I tried today:
Pork Medallions with Cherry Sauce: YUM! Love cherries, so I thought this would be good, and it is! My only problem is that I bought a smaller pork tenderloin since I hadn’t made it before. If I’d known how good it was going to be, I would’ve bought two!
Roasted Spaghetti Squash Hash Browns: This was disappointing to me. I did everything as directed, but the squash never got “crispy.” Tried a second batch, but still didn’t work. Since I had one spaghetti squash left, as well as home grown romas, I tried a variation of…
Baked Spaghetti Squash Lasagna: I used low fat cottage cheese mixed with low fat mozzarella instead of straight mozzarella. I also used my own sauce, made from home grown Roma tomatoes. I can’t give you a review of this one as I’m saving it for tomorrow’s dinner – Meatless Monday!
Lemon Broccoli: Combine 2 T olive oil, 1/2 t finely shredded lemon peel, 4 t lemon juice, 1 garlic glove, 1/4 t salt, 1/8 t pepper. Drizzle over 6 cups steamed broccoli. Toss to coat.
I didn’t get to the Butter Bean Salad, but hope to get to it tomorrow evening. I’ll have these links on the blog recipe page in the next day or so, maybe even this evening.
