Trying to incorporate more veggies, I tried adding them to scrambled eggs tonight.
This is two eggs, splash of lite soy milk, a tablespoon of Asiago cheese + half a cup of mixed veggies, consisting of peppers, spinach, zucchini, squash and a white mushroom.
Not bad, actually, but I discovered that I don’t like mushrooms. I ate 3/4 of the veggie scramble, but the last bite had a mushroom, and I literally gagged. (Traci will laugh at this.She said today that veggies wouldn’t make me throw up in my mouth. But this last bite of mushroom almost did. REALLY!)
At any rate, this is progress. I just need to keep it up.
