I’m coming up short on potassium and vitamin A.
My goals for the coming week are to:
- Increase my veggies to 2-3 servings per day. That will be easier once I’m back in my own kitchen.
- Work on getting more potassium and vitamin A.
- Exercise four times.
Here’s one of the first recipes I’m going to try? Skinnytaste Spinach Lasagna Rollups. Look good, have spinach (one of the few green veggies I can handle), easy to freeze and portable, i.e. good for when I return to work.
